Recipe: Warm Asparagus Salad

Looking for a simple, healthy breakfast recipe to try out? We spent the weekend at the cottage playing with food and can't wait to share this new recipe! 

 

 

The Goods 

1 bunch of asparagus 

6 hardboiled eggs 

1 cup of breadcrumbs (we used Country White Semolina & Quinoa Bread Crumbs which are organic and have great crunch!)

6 tbsp of ghee (roughly two per person)

 

*What is great about this recipe is you can easily modify the above to your liking. We used the above measurements to make three dishes but the quantities are loose and can be adjusted to any taste!

 

The Method 

Take a large flat bottom frying pan, add breadcrumbs 

Turn to a high heat

Toss breadcrumbs until they are golden brown  

Set breadcrumbs aside and wipe your pan 

Lay all asparagus flat on the bottom of the frying pan with a little bit of water

Turn up to high heat and allow the asparagus to steam 

It is important to lay all the asparagus flat so they cook evenly and quickly 

In a small saucepan add ghee 

You don't need to cook the ghee, you just want to warm it up 

*Ghee has all of the flavours of the brown butter without the dairy allergies. It is also a great source of vitamins A & E.

 

To plate 

Lay asparagus on the plate in a bunch vertically

Chop up the hardboiled eggs and sprinkle horizontally across the plate 

Sprinkle breadcrumbs over the top of the eggs and finish with a drizzle of ghee 

 

 

Feel free to play around! This recipe would be great with a poached egg as well!
