Recipe: Roasted Brussels Sprouts

For The Love of Food

Brussels sprouts are a finicky thing and can be difficult to prepare for picky guests at your next dinner party. But if you are up for the challenge, we are sure we have a delicious new recipe that will have your guests asking for more!

 

The Goods 

2-3 fresh brussels sprouts per person 

1 container of duck fat 

1 container of ghee

 

The Method

Wash brussels sprouts thoroughly.

Cut off ends and chop in half (this can be prepped the night before cooking.) 

 

To cook, place brussels sprouts in pan flat end down on high heat.

Add 1 tbsp of duck fat 

Add 1 tsbp of ghee

Fry cut side down until browned and crisp

Toss until all sprouts are covered with ghee and duck fat and set aside

 

*Depending on how many brussels sprouts you are preparing, you may need to divide into batches. 

 

The Prize 

 

 Voila! A new and delicious way to prepare this little green vegetable. An added plus? This dish can be served room temperature!
