With a name like For The Love of Food, it's no surprise that we love trying new things for dinner! One of our favourite dishes to make is Lemon Thyme Chicken.
Whole chicken quartered
Fresh lemon juice from 2 lemons
Lemon zest from 1 lemon
1 bunch Shallots
Salt & pepper
Combine fresh lemon juice, just enough olive oil, smoked paprika, shallots, fresh thyme and a healthy amount of salt and pepper to create marinade.
Marinate chicken for 2-3 hours (more if desired).
Remove chicken from marinade.
Position quarters in deep, heavy, cast iron pan.
Fill the gaps with chunks of carrots and peeled onion.
Strain marinade over chicken and vegetables directly over pan.
Add a touch more salt and pepper.
Place into oven at 325 degrees for 30 minutes (timing may vary depending on size of chicken.
Broil for an additional 10 minutes (approx.)
