Recipe: Roasted Cauliflower Salad w/ Tahini Dressing

Mix up your salad routine with this plate that is perfect for fall!

The Goods

1 head cauliflower

Olive oil

Arugula

1/3 cup organic tahini

1/3 cup water

1/4 cup fresh lemon juice

2 garlic cloves minced

​1/2 tsp sea salt

Sea salt & pepper to season

The Method

Chop cauliflower head into big pieces and place into bowl.

Toss cauliflower in olive oil and salt & pepper until mostly coated.

Place cauliflower on baking tray, flat side down and into the oven at 400 degrees for 25-30 minutes or until golden brown.

Combine tahini, water, fresh lemon juice, garlic and sea salt in a small handheld blender until mixed.

Plate a healthy amount of arugula or mixed greens onto your plate.

Place desired amount of roasted cauliflower on top of greens.

Drizzle with dressing.
