Recipe: Roasted Squash Salad
Looking for something with a fall feel but still tastes fresh? This roasted squash salad is quickly becoming one of our favourites and is sure to be a hit with your friends and family this Thanksgiving weekend!
1 butternut squash
1 acorn squash
Spicy, candied pecans (click here for recipe)
1 head of lettuce
1 head of red cabbage
1 block white cheddar
2-3 springs of thyme
maple syrup dressing (click here for recipe)
salt & pepper to season
Preheat oven to 425°f.
Slice squash into 1/2-1 inch slices.
Place on baking tray.
Drizzle with olive oil.
Season with a pinch of salt, pepper and a few springs of thyme.
Bake in oven for 30 minutes.
Allow to cool.
Wash and chop lettuce and radicchio and place in large bowl.
Place squash over salad.
Sprinkle with pecans and large chunks of white cheddar.
Drizzle with maple syrup dressing & enjoy!
